BERBERE is a combination of peppers, garlic, onion
and other spices that is dried and ground into a powdered form.
It has a full-bodied taste with a bit of heat (spiciness) and
is very versatile, complimenting both meat and vegetable dishes.
MITMITA is also a combination spice. It
is made from hotter peppers, and still cotains onions, garlic,
cumin, ginger and other spices. It is also dried and ground.
Mitmita also has a full-bodied taste, but has much more heat
than Berbere.
INJERA is a of flat, spongy bread that
resembles a crepe or a pancake. Injera is made of Tef, Ethiopian
staple grain or wheat and barley.
NETIR KIBE (PURIFIED BUTTER) Butter cooked
with garlic, ginger, cardamon, corriander and other exotic Ethiopian
spices. The butter is strained through cheese cloth to become
purified.
